2 free range eggs
2 large handfuls of spinach
Whilst your potatoes are in the microwave, poach your eggs in gently simmering water. Then all you need to do is grab a handful of spinach, pop it on top of the potato, top it with the egg, sprinkle with a few chilli flakes, and you’ve got a super, simple supper or lunch.
