The award winning Fourth Floor Café & Bar in Harvey Nichols’s Leeds store, has welcomed Bradford-born Paul Cunliffe as their new head chef.

Joining directly from The Crown Hotel in Exford, Paul has over 14 years experience in some of the most respected kitchens in the UK, including Aldwark Manor and the Restaurant Anise at Hazlewood Castle.

Paul said, “I have worked in some great kitchens and have been waiting for an opportunity to come back to Yorkshire. I want to build on the strong foundations and reputation that the Café, Bar and Espresso Bar have and take the offer and the team to the next stage. I wouldn’t have been able to be the chef I am today without great mentors; learning the basics from chefs I really respected.”

Paul is only interested in serving the highest quality food made from the best ingredients. He always aims to create great modern British food with a twist and combines traditional techniques with contemporary gastronomic equipment in order to get the most out of the ingredients.

On Yorkshire was among the first to sample Paul’s new menu, which included delicious roast saddle of lamb, pomme dauphine, cauliflower puree, roast grelot onions, black pudding fritter, greens, pear tarte tatin and maple syrup ice cream.

At an informal masterclass, Paul demonstrated how he created a few of his favourite dishes and how his techniques could be transferred to the home kitchen. In fact, On: Magazine has already tried and tested his delicious pear tarte!

Paul will also be offering further cooking masterclasses on the following dates:
